Banana Daiquiri ABV 21.16%
Cabby’s Small Batch Rum, Banane De Brasil, Forever Lime, Tropical Oleo
The Daiquiri was originally invented in Cuba circa 1902 and introduced to the US the same year. It became more popular during WW2 with shortages of Vodka and Whiskey and was reputedly a favourite tipple of Earnest Hemingway.
Our take on this uses East London’s favourite rum – Cabby’s, Banana De Brasil, banana liqueur and The Umbrella Project’s own tropical oleo, made from the spent fruit used in our cocktails, macerated in sugar
Umbrella Margarita ABV 24.93%
Ocho Blanco Tequila, Forever Lime, Agave Nectar
This Margarita is based on a Tommys Margarita (sometimes referred to as a San Fran Margarita) which is the best in our opinion. Developed by Julio Bermejo in San Fransisco 1990, the Tommys Margarita swaps out triple sec for agave nectar, which enhances the cirtrus flavours and is served on the rocks instead of straight up.
Our take on this uses Ocho Blanco Tequila, a staple in The Umbrella Project bars, Agave Nectar and Forever Lime. Forever Lime is a lime cordial made from a combination of citric, magic and tartaric acids which means it does not only taste great but lasts much longer than conventional lime juice.
East 8 Hold Up ABV 16.63%
Victory Vodka, Passion Fruit, Pineapple Syrup, Hotel Starlino Aperitivo, Forever Lime, Pink Grapefruit Cordial
Very much a contemporary classic cocktail and a staple of Discount Suit Company, this was invented in East London, hence the nod to the post code, circa 2010 by Kevin Armstrong –  owner of one of our favourite East End hang out bars Satans Whiskers.
Our take uses Victory Distillery Vodka – a fave and independent local distillery, homemade passionfruit, pineapple syrup and grapefruit cordial with the added bonus of a small producer orange aperitif.
East London Negroni ABV 25.43%
East London Liquor Company Gin, Victory Bitter, The Umbrella Project Vermouth
Although no one knows for sure, this popular Italian aperitif is reputedly in Caffè Cosoni 1919. Pascal Oliver Count De Negroni asked the bartender to concoct a stronger version of his favourite drink – the Americano – and the rest is history.
Our version celebrates all this, with the addition of East London. East London Liquor Company Gin, located only a five minute walk from The Sun Tavern, Victory Bitter, the first and only bitter aperitif British made and our own and our exclusive The Umbrella Project Vermouth, made to compliment the flavours of the gin and bitter aperitif.
Irish Old Fashioned ABV 27.77%
Teeling Small Batch Whiskey, Oloroso Sherry, Angostura Bitters, Regan’s Orange Bitters, Demerera
With origins dating back to the early nineteenth century, the Old Fashioned is first properly claimed by The Pendennis Club which was founded in 1881. It was made in honour of prominent whiskey distiller James E. Pepper who in turn brought it to New York City.
The Umbrella Project version has of course got a nod to Irish Whiskey as that is our main tipple at The Sun Tavern. Teeling Small Batch Whiskey and Oloroso Sherry and Bitters. Simple and great tasting.
Three Dots And A Dash ABV 17.53%
Cabby’s Small Batch Rum, Velvet Falernum, Pimento Dram, Merlet Triple Sec, Citrus Oleo, Forever Lime, Bermondsey Honey.
First created during WW2 by the Daddy of Tiki ‘Don The Beachcomber’, Three Dots and a Dash, which is morse code for Victory, is a staple of any classic cocktail bar and of course that means us too!
In our version we use East London’s Cabby’s Rum, with spice notes from the Velvet Falurnum and Pimento Dram. Our own homemade Oleo gives a sharp sour citrus flavour, and to round it all off we’ve included Honey from a local small producer honey supplier – Bermondsey Honey.
