Calle 23 (pronounced ‘Kai-Yay’) is the brainchild of Sophie Decobecq, a French-born biochemist and engineer, who worked in France’s cognac industry before falling in love with agave.
Calle 23 Reposado uses Blue agave courted from the ‘Los Alots de Jalisco” area of Mexico. These agave are left alone to mature for over 7 years and then harvested. This species is used for its exceptional flavour. After distillation the tequila spends 8 months maturing in ex bourbon barrels to round off this delicious tequila.
