Denny Bini is a well known figure in the world of Lambrusco, and part of the renaissance/revolution that holds artisanal production (rather than mass production) at the core of everyone’s favourite Emilian party wine. Denny has a 7 hectare, organic farm on the outskirts of the city of Reggio Emilia, where the plains begin to turn into gentle green rolling hills. Before being offered a cellar space from a friend, Denny would make wine in his garage from the Lambrusco grapes he began planting in 2003 on the land he rented from his grandfather. The winery has grown a lot since then, and Denny has positioned himself at the forefront of the Lambrusco scene.

Although a lot of Denny’s wines are made in the bottle fermented “metodo ancestrale” (aka “pet nat”) style, this Lambrusco is made using the Charmat method (the way Prosecco is made). This involves putting the wine into a large steel pressurised tank for second fermentation, which lasts around a month. The wine is unfiltered and unfined, resulting in a fun and rustic wine with a nice amount of tannin and plenty of depth in the fruit.
